Barbadillo VORS Palo Cortado is not only long aged but is also one of the rarest styles of Jerez wine. Palo Cortado wines start out as particularly good examples of Manzanilla , marked and set aside due to their superior quality as determined by the wine makers. These special barrels are given extra fortification (brandy is added to the wine) which kills off the protective yeasts and allows oxygen to contact the wine in the barrel. After many more years in the barrel these wines develop a dark amber color along with the rich, nutty, slightly oxidized aromas and flavors that are the hallmarks of Palo Cortado. Coffee bean, burnt matchstick, toffee caramel and toasted walnut are descriptors used in evaluating Palo Cortado Jerez wines.
