Jerez Cortado Wellington Palo Cortado VOS - Hidalgo

The Jerez Cortado Wellington from Bodegas Hidalgo is an outstanding VOS Palo Cortado. The amazing thing about these old sherries is that the winery actually needs to schedule an appointment with the Consejo to unlock the barrels to bottle it. A round, plush mouthfeel of toasted nuts and caramel are enlivened by a saline note that make this dry sherry a treat. Try this with some sliced jamon iberico or any dish with mushrooms. Absolutely excelente.
