Cesar Florido Moscatel Pasas is a dense, fullfilling and mouthcoating dessert wine with intense flavors of figs, apricots and toffee.
The wine comes from the oldest bodega in the town of Chipiona, within the Jerez Denominacion de Origen. The bussiness started in the 18th Century and still belongs to the same family. The surrounding area of the town is mainly devoted to the production of Moscatel grapes like the ones used to fill up this bottle. For the production of Moscatel Pasas, the clusters were laid out in the sandy flats close to the ocean and left to dry for two to three weeks. Once the majority of the moisture evaporated, the grapes were crushed and the fermentation was stopped by the addition of neutral grape spirits, in order to leave quite a bit of natural sugar. After all this process, the wine spends nine years aging with the solera system.
