Aphros Vinhao Super-Reserva is one of the most surprising wines we've ever tried. It is a sparkling red wine, to begin with. And it is make from Vinhao, one of the darkest grapes (and juices) you'll ever see. It is an extraordinary surprise in the glass, and keeps surprising in the palate: it starts with an exuberance of red fruits, with some dark chocolate irrupting in your palate, followed by refined tannins. Certainly, it is the best sparkling choice for meats and spicy cuisine.
This wonderful rarity comes from Aphros, the first certified byodinamic producer in Portugal, meaning, as a general principle, that "each farm should be understood as a self-sustained system, to be created out of its own bio-diversity, in a harmony between soil, plants, animals and human activity". The project is leaded by Vasco Croft, who defines 'biodinamic" principles in a much more poetical way: "Unlike regular farming, biodinamic farming is not only about causes and effects. It is farming as an act of love for the vines you are growing".
